Carrot and Feta salad

Ingredients
 4 medium carrots, chopped, boiled and chilled
¼ cup Feta cheese, cubed

Kalamata olives and parsley for garnish

 

 Dressing
 1 tablespoon olive oil 
 1 clove garlic, crushed 

Pinch of cumin
pinch of black pepper 
¼ cup lemon juice


Preparation

 

1.    Chop carrots, boil them, drain and place in cold water

2.    Make the dressing, and add to drained carrots and parsley.

3.    Add Feta and olives
